In plain English

You switch it on or off for each web data stream under Admin → Data streams, and each part can be turned off individually.

It's a quick win, but check what it sends. The scroll event only fires at 90% page depth, and the form interaction events can fire on forms that weren't actually submitted. If you track the same things in GTM, turn off the matching enhanced measurement option so you don't count them twice.

Example

Enhanced measurement sends a file_download event whenever someone clicks a link to a PDF, with file_name as a parameter. A business with downloadable brochures gets that tracking for free.
